Thanks! It really is simple...the challenge, of course, is finding great tomatoes. I'm thinking we'll have some around my neck of this woods this weekend!

I have been really lucky this summer with my own tomatoes and the farmers I get vegetables from. We have had wonderful vegetables all summer. I just hate for it to end.

Would dried fine herbes also work????

Or are you recommending using just fresh parsley and tarragon?

Hello there! Fresh parsley and tarragon is best, but ... well, in a pinch, you might already know my trick of using fresh parsley and a touch of dried tarragon and mixing it all together. It's what I do when I can't find viable fresh tarragon. Dried is better than tarragon in this case! Be sure to crush it between your thumb and finger to release the flavor (but you probably already know that!) :)

And if you don't have fresh chives, again, a few dried will work, but I generally finely chop a green onion instead--white and tender green tops.
